Christmas Cookies

CAKE MIX COOKIE VARIATIONS

This is a holiday themed version of cake mix cookies made with white cake, but you can use this basic formula to make pretty much any flavor of cookies. Some of our favorites include

  • Chocolate Cake Mix + Chocolate Chips
  • Red Velvet Cake Mix + White Chocolate Chips
  • Yellow Cake Mix + Toffee Bits
  • German Chocolate Cake Mix + Pecans + Coconut
  • Chocolate Cake Mix + Chocolate Sprinkles

These cake mix cookies are a 5 ingredient dessert that can be made in tons of different flavors and decorated for any occasion. An easy treat that takes just minutes to put together.

INGREDIENTS

  • 18 1/4 ounce box white cake mix
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 cup sprinkles divided use

INSTRUCTIONS

  • Preheat the oven to 350 degrees F. Line a cookie sheet with parchment paper or a nonstick baking mat.
  • In a large bowl, mix together the white cake mix, eggs, oil and vanilla extract until smooth.
  • Stir in 1/4 cup of the sprinkles.
  • Roll the dough into tablespoon sized balls.
  • Pour the remaining 1/2 cup of sprinkles onto a plate. Roll the balls of dough around in the sprinkles to coat.
  • Place the balls of dough 2 inches apart on the prepared baking sheet. You will need to work in batches.
  • Bake for 8-10 minutes or until cookies are set and lightly browned
  • Cool, then remove from the baking sheet and repeat the baking process with the remaining dough. Serve immediately, or store in an air tight container for up to 3 days.

Cuban-Style Pork Sandwiches

Ingredients

  • 1 large onion, cut into wedges
  • 3/4 cup reduced-sodium chicken broth
  • 1 cup minced fresh parsley
  • 7 garlic cloves, minced and divided
  • 2 tablespoons cider vinegar
  • 1 tablespoon plus 1-1/2 teaspoons lemon juice, divided
  • 2 teaspoons ground cumin
  • 1 teaspoon ground mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 package of pork chop slices
  • 1-1/4 cups fat-free mayonnaise
  • 2 tablespoons Dijon mustard
  • 10 whole wheat hamburger buns, split
  • 1-1/4 cups shredded reduced-fat Swiss cheese
  • 1 medium onion, thinly sliced and separated into rings
  • 2 whole dill pickles, sliced

Directions

  1. Place onion wedges and broth in a 5-qt. slow cooker. In a small bowl, combine the parsley, 5 garlic cloves, vinegar, 1 tablespoon lemon juice, cumin, mustard, oregano, salt and pepper; rub over pork. Add to slow cooker. Cover and cook on low until meat is tender, 6-8 hours.
  2. Remove meat; let stand for 10 minutes. In another small bowl, combine the mayonnaise, mustard and remaining garlic and lemon juice; spread over buns. Layer bun bottoms with pork, cheese, sliced onion and pickles; replace tops.
  3. Cook on a panini maker or indoor grill until buns are browned and cheese is melted, 2-3 minutes.

Elbow Pasta and Chicken

Ingredients

  • 4 oz. Elbow macaroni or 1 package of precooked Barilla Ready Pasta
  • 1 Tbsp./½ oz. extra virgin olive oil
  • ¼ cup/1 oz. finely chopped garlic
  • 2 Tbsp. capers
  • 1 28 oz. can whole tomatoes – no salt added
  • 2 cups/4 oz. cooked chicken diced
  • 8 cups/8 oz. roughly chopped spinach
  • 1 oz. Mozzarella Cheese

Instructions

  1. Bring a large pot of salted water to a boil. Cook the Pasta according to package directions. Drain and reserve.
  2. Heat a large sauté pan over medium heat. Add the olive oil and garlic. Cook until aromatic (about 30 seconds).
  3. Add the capers and tomatoes. Use a whisk or a large fork to break up the tomatoes. Heat to a simmer. Taste and adjust seasoning.
  4. Stir in the spinach and chicken. Heat chicken through and allow the spinach to wilt (about 2 minutes).
  5. Divide between 4 bowls. Grate Cheese over the pasta.
