British Yorkshire puddings take less than 10 minutes from start to finish

Ingredients

  • 3 tablespoons vegetable oil
  • 2 eggs
  • ½ cup all-purpose flour, or as needed
  • 2 tablespoons all-purpose flour
  • ½ cup milk
  • 1 pinch salt and ground black pepper

Directions

Step 1Preheat the oven to 400 degrees F (200 degrees C). Pour oil equally into 6 cups of a Yorkshire pudding tin and place in the oven to heat.

Step 2Line up 3 identical glasses. Add eggs to the first glass. Add milk to the second glass; it should come to the height of the eggs in the first glass. Add 1/2 cup plus 2 tablespoons flour to the third glass; it should match the height of the eggs and milk in the other glasses. Whisk measured eggs, milk, and flour together in a mixing bowl. Season the batter with salt and pepper.

Step 3Remove hot oiled tin from the oven. Pour batter into the cups and return tin immediately to the oven.

Step 4Bake puddings in the preheated oven until well-risen, 4 to 5 minutes.

HEARTY BLACK BEAN QUESADILLAS

These super tasty Black Bean Quesadillas have been a runaway Budget Bytes hit since they were first posted in 2012. The spicy mix of cheese, beans, corn, cilantro, and onion makes and incredibly flavorful quesadilla that’s perfect for dipping in some cool sour cream or salsa. Make up an entire batch and freeze some for later!

INGREDIENTS

  • 1 15oz.can black beans 
  • 1 cup frozen corn 
  • 1/2 cup red onion 
  • 1 clove garlic
  • 1/4 bunch fresh cilantro (about ½ cup chopped)
  • 2 cups shredded cheddar cheese 
  • 1 batch taco seasoning* 
  • 10 flour tortillas (7-inch diameter) 

INSTRUCTIONS

  • Drain the black beans and add them to a bowl along with the frozen corn (no need to thaw)
  • Finely dice the onion, mince the garlic, and roughly chop the cilantro.
  • Add the onion, garlic, cilantro, shredded cheddar, and taco seasoning to the bowl with the beans and corn. Stir until everything is evenly combined and coated in seasoning.
  • Place a half cup of the filling on one side of each tortilla and fold over. Cook the quesadillas in a skillet over medium heat on each side until brown and crispy and the cheesy filling has melted. Slice into triangles then serve.
  • To freeze the quesadillas, stack the filled and uncooked quesadillas with a piece of parchment paper between each quesadilla. Place in a freezer bag and freeze for up to three months. To reheat either microwave (for a soft quesadilla) or cook in a skillet on low heat (make sure to use low heat so that the filling has time to thaw and melt before the outside burns).

NOTES

* you can use homemade taco seasoning here, but you can use a store-bought packet of taco seasoning if needed.

SAUSAGE AND EGG BREAKFAST CASSEROLE

If you like sausage, you’ll love this recipe, but if you prefer bacon you can use that instead or include both

which is what we like to do. You can make this up to 24 hours before cook time. Just cover and place in fridge until ready to cook.

Here are the ingredients needed for this casserole:

  • sausage
  • crescent sheet or crescent rolls
  • cheese
  • eggs
  • milk
  • Italian seasoning
  • salt & pepper

Start the casserole by preparing your sausage. While the sausage is browning, unroll the crescent sheet and spread onto the bottom of a greased 9×13 pan. Spread the sausage over the dough and sprinkle the cheese on top.

Whisk together eggs, milk and seasoning in a bowl and pour over the top of your casserole.

Bake at 400 degrees for 15-20 minutes.

When the eggs are set and the crust is golden, the casserole is ready

How to Make Soda Cake

Ingredients

  • 1 box cake mix
  • 1 can (12 ounces) soda

Editor’s Tip: This recipe also works with a can of club soda or sparkling water.

Instructions

Step 1: Check out the box

Follow the directions on the box mix to preheat your oven to the proper temperature. Then, grease a cake pan with cooking spray or line muffin cups with paper liners.

Step 2: Make the batter

In a large bowl, beat together the cake mix and soda for two minutes, either by hand or with an electric mixer.

Step 3: Bake the cake(s)

Pour the batter into the cake pan(s) or divide the batter evenly among the cupcake cups. Follow the directions on the box mix for cooking times.

Step 4: Decorate

Once the cake is cool, decorate with your favorite buttercream icing. (Or, you know, your canned frosting .)

  • Step 1In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball.

Quick Garlic Noodles

Ingredients

  •  3 tablespoons butter + 1 tablespoon olive oil
  •  6-8 fresh garlic cloves, minced (we always use 8)
  •  2 scallions, greens only (thinly sliced)
  •  1-2 tablespoons fish sauce
  •  1-2 tablespoons oyster sauce
  •  1 tablespoon granulated sugar
  •  1/4 cup shredded parmesan cheese
  •  8 ounces noodles
  •  fried garlic, for topping
  1. Infuse the Butter: Heat a large pot with water and allow it to come to boil, cook the noodles according to package directions, drain and set aside. While the water is boiling, grab a large, non-stick skillet and place it on medium-low heat. Add the butter, oil olive, garlic, and scallions. Let the butter infuse with the garlic for 5-7 minutes, stirring often. The garlic should barely sizzle here, you don’t want it to brown.
  2. Garlic Noodles: While the garlic is going, grab a small bowl and mix together the fish sauce, oyster sauce, and the sugar. When the garlic is cooked, kick the heat up to medium-high, stir in the prepared sauce; let cook for 30 seconds. Add the prepared noodles and toss with parmesan cheese (yes, parm!) Let the noodles cook for a minute so they soak up all that flavor. Top with fried garlic and serve immediately!
